• 6 filets of fish (we used cod)

  • Marinade
  • Juice from 1 lemon
  • 1 cup of white wine
  • 3 Tbsp garlic powder
  • 2 tsp dried oregano
  • salt and pepper to taste

  • Sauce
  • 1 onion minced
  • 2 garlic cloves minced
  • 3 Tbsp vegetable oil
  • 3 sticks of butter
  • 2 cups white wine
  • 1 bunch of green onions minced
  • 1/2 cup lemon juice
  • 1 Tbsp minced parsley
  • 1/4 cup shredded Parmesan cheese
  • 5 cups chicken broth
  • 1 Tbsp cornstarch mixed with 2 Tbsp water

  • Breading
  • 1 cup flour (aside for dipping fish first)
  • 2 eggs scrambled (use more as needed)
  • 2 cups panko bread crumbs
  • 1/4 cup shredded Parmesan cheese
  • 2 Tbsp minced parsley
  • salt and pepper to taste

We love our marinades! For this dish we decided to create a Parmesan crusted fish and we also made chicken for the non seafood eaters in our family. (Natalie being one of them) I was surprised at how crunchy and tasty this came out in the oven.  I’m going to explain based on the fish, but feel free to use chicken as well

First thing we did was marinate the fish.  We took the juice of one lemon, and added white wine, garlic powder, oregano, and the salt and pepper to taste.  We let the fish soak in there as we made the sauce.  Also you should start preheating the oven at this point.  350 degrees.

For the sauce we started out by sauteing the onions and garlic with the vegetable oil over medium heat until soft.  We then added three sticks of butter and mixed that until melted.  To that we then added the wine, lemon juice, green onions, parsley, and Parmesan cheese.  We found that the sauce was a bit too lemony and wine-y so we added chicken broth to make the flavors less strong and then cornstarch to thicken it.  This is a lot of sauce, so you may want to half the recipe and definitely use less wine.  Cook all this together until thickened and then set aside.

Let’s bread the fish now.  For the breading put together panko bread crumbs, Parmesan cheese, parsley, and salt and pepper in a small bowl and mix well.  Our breading station will consist of the fish, plain flour, eggs that are scrambled, and breading.  Take the fish out of the marinade, coat with flour, dip in the eggs, and then dip in the breading.  Set the fish aside and now we will put it all together.

In a pan place the sauce on the bottom so that it covers about 1/2 an inch to an inch.  Then layer the fish over the sauce and put it in the oven.  Cook in the preheated oven for about 30 min or until the top is browned, crusty, and delicious!
