- 6 pieces of chicken
- 2 Tbsp Garlic Powder (divided to each chicken)
- 1 Tbsp Paprika (divided to each chicken)
- salt and pepper to taste on each chicken
- Buttermilk (enough to cover all the chicken)
- 2 cups Cornflakes
- 2 cups Panko Breadcrumbs
- 1 cup Parmesan Cheese (Grated or Shredded)
- 2 Tbsp Garlic Powder
Fried Chicken – So good, yet not good for you. Plus its just messy and hard to make isn’t it? Natalie and I got together to make a baked version of this fried chicken and of course we added some cheese. It was very good. Here is the recipe!
We only used chicken breasts but I”m sure this could just as easily be made with chicken legs, thighs, even wings!
First thing we do is prepare the chicken. Sprinkle the garlic powder, paprika, salt and pepper on each piece of chicken. Make sure to get both sides. Then dunk each piece of chicken into the buttermilk and let it sit there for at least 30 min. If you have more time, go ahead and leave it in the fridge for a couple of hours.
In the meantime lets make the breading! Take the cornflakes and mash them! We put them into a ziplock bag and just crunched them up. After that we added the panko breadcrumbs, Parmesan cheese, and garlic powder to the bag and shook it up until it was all uniformly combined. We then took one piece of chicken at a time and put it in the ziplock back with the breadcrumbs and shook it up again. Once the chicken was covered we placed it on a rack over a broiling pan as shown in the picture. We found that this way more of the chicken would stay crispy as if it were fried. If you place it flat on a baking sheet the bottom part of the chicken would not be crispy, it would end up being soggy and that is not how fried chicken is supposed to be.
Place the chicken into the oven, 350 degrees for about 40 min. It should come out nice and golden and of course crispy! Enjoy!
