- Zucchini cut into slices

- 3/4 Cup Olive Oil
- 2 Tbsp Minced Garlic
- 1 Tbsp Oregano
- Maple Bacon
- Tomato slices
- Bread (We used sourdough from Cracker Barrel)
I love grilled cheese. I just love having so many different options when it comes to one meal. There are endless combinations, between the bread, the cheese, and then anything else you would like to put it in. This particular night, we made dinner for only 4 people. Smaller than usual, and we created three different types of grilled cheese sandwiches. My favorite was the veggie grilled cheese sandwich. The other two that were made were tomato and cheese and of course bacon and cheese. Once again we used the maple bacon… YUM!
First off, lets prepare the fillings. For the veggies we took onions, zucchini and red peppers and sliced them up. We then put them in a baking dish with some olive oil, garlic, oregano, salt and pepper and then cooked it in a 350 degree oven for about 20 min until the veggies were roasted. For the bacon, just cook the bacon and set it aside. We like to cook our bacon in the microwave. We put about 4-5 slices on two paper towels on a plate. We cook on high for about 1:45 min. Then we transfer to another plate with two new paper towels. Cook another 1:45 and after that it should be cooked and ready to enjoy. Finally the tomato one is simple, just slice up some tomatoes.
For the bread we used Cracker Barrel’s sourdough bread. This bread is pretty amazing. It’s sourdough yet somehow sweet. It is perfect for grilled cheese sandwiches. So we just buttered up one side of the bread and put that down on the grill. Then we put the a slice of cheese on each bread. Let it sit on low for a bit, until the cheese starts to melt. Then throw the filling on one side, and put the other slice of bread on top. Cook a bit longer until you have it as browned as you enjoy it. Have fun, cooking is all about new ideas and throwing things together to see how it fits. In our case we used Havarti cheese for the veggies, Munster for the tomato, and cheddar with the bacon.
Natalie added a bit of Parmesan on the outside of her slices of bread and created this Parmesan crust sandwich. It all came out absolutely delicious. We had it with out Beer Cheese Soup, although I think I would prefer a creamy tomato soup next time.
