• 1/2 cup milk chocolate chips
  • 2 Tbsp Balsamic Vinegar
  • 4 Tbsp Vegetable Oil
  • 1 Tbsp Honey
  • pinch of salt

The other day, a few of my friends and I got together for a cooking challenge.  My challenge was to incorporate chocolate, bacon and onions into a side dish and a main course.  For the side dish, I decided to make a spinach salad with bacon and onions and a chocolate dressing.  I wasn’t sure how this was going to come out, but I decided to give it a try.  I search on the internet for a chocolate vinaigrette and found a recipe.  The only thing is that I wanted more chocolate in it, and I wanted it to be on the sweeter side. So I used this idea and made it my own.  Everyone loved it! My mom would have one piece of spinach with a spoonful of dressing. She insisted on the leftovers. So here it is, the first not so cheesy recipe!

Melt the chocolate chips in the microwave.  I had the best luck going slow.  I put the chips in for 30 sec, stirred, then another 30 sec and it was melted nicely without over cooking.  Once the chips are melted, whisk in the balsamic vinegar and oil first, then add the honey.  Finally add a bit of salt to taste.  You only need a little bit.  It is ready to be served on salad, fruits, or by itself.  If you are a chocolate lover you will love this dressing!
