- Taco Meat
- 2 onions diced
- 2 cloves of garlic minced
- 3 lbs of ground beef
- 1/4 cup Teriyaki sauce
- 2 packages of Taco Seasoning Mix
- 1 1/3 cup of water
- 1 1/2 cups shredded Mexican mix cheese
- salt and pepper to taste
- Flour and Corn tortillas cut into 8ths
- Vegetable Oil for frying
- Cheese Sauce
- 2 pints heavy whipping cream
- 2 cups shredded sharp cheddar cheese
- 4 cups shredded mild cheddar cheese
- 1 lb Velveeta Cheese
- pepper to taste
We love Mexican food. An easy amazing meal our entire family always loves is taco night. This is one of the few nights where no one declines the invitation. Tonight we decided to make nachos, but not simple quick nachos, we actually took corn and flour tortillas, cut them into eighths and deep fried them. We made a cheese sauce from scratch. Finally we made our loved cheesy taco meat. It was such a delicious meal, I ate 3 tacos and about half the nachos!
First thing we made was the taco meat. In a large skillet saute the onions and garlic until they are soft. Then add the ground beef and cook until it is almost thoroughly cooked. Towards the end add the teriyaki sauce, taco seasoning mix, water, and salt and pepper to taste. Combine all those ingredients and cook until the meat is done. At the end add the shredded cheese and cook until cheese is melted.
The next thing we did was deep fry all the nachos. We found that the flour tortillas were preferred over the corn tortillas. Just cut into eights and deep fry in hot vegetable oil. My dad had an even better idea after the meal. He created a cinnamon sugar mix and combined that with the fried tortillas. That was a great unexpected dessert to our dinner!
The cheese sauce was also great. It was smooth, and tasty, not too strong, but not to mild either. Perfect sauce to put in tacos, to have plain with nachos, or even combine with salsa and create a dip. On a stovetop in a pot heat up the whipping cream being careful not to boil it over. Once it is warm and simmering, add the 3 cheeses and stir until melted and creamy. If you wish add some pepper. It was so easy and so good. Keep it warm to keep it creamy.
Now load up the nachos however you’d like. We put the nachos on a plate, and then put refried beans, the meat, shredded lettuce, diced onions, diced tomatoes, salsa, sour cream, and the cheese sauce. Dig in before it’s gone!
